CAYEYE

Mashed green bananas with butter and Costeño cheese

This is the most traditional dish from Santa Marta.  It is not known that this very same dish is cooked by other cultures.  However there is a different version in Dominican Republic called Mangú and it is made from boiled plantains.  We believe that when the United Fruit Co. was operating in our region all the bananas that did not meet quality export standard were thrown away.  These bananas were left on the ground along the railroad tracks around where the public market is now located.  Because these fruit was free people began to find ways to eat it in many ways such as boiled or fried.  The origin of the word Cayeye we have found to believe that comes from the Taino language Cayey and it means “a place of water”

A traditional soup from the Bogota region.  Made with several kinds of potatoes, corn, capers and Guasca (a herb that grown around Bogota) that gives this soup an unique flavor

There are similar versions of this recipe can be found in cookbooks from ancient Rome, Arabia, India and China.  It is very difficult to know its origin.  However we know that the current version dates after tomatoes are taken to Europe

Spaghetti in a cream and butter sauce

In 1908 Alfredo Di Lelio creates this recipe at his mother's restaurant and gives it his own name.  This is a great meal option for those who don't eat meat, poultry or fish.
